Celebrating Easter Richmond Style

Happy Easter! I hope everyone had a wonderful Easter. It was nice to spend the holiday with my Husband after not being with him for it the past two years. Plane tickets are always ridiculously expensive for Easter, so we weren’t able to swing traveling.

We actually started our Easter celebration a little early. I made carrot cake cupcakes with cinnamon cream cheese frosting yesterday afternoon. I used the Alton Brown carrot cake recipe and the frosting recipe was one from Baked Perfection that I used on my pumpkin brown butter cupcakes last fall. They turned out pretty good. The cake is moist, but actually a little bland. I think the next time I make these I will increase the spices. This frosting is one of my favorites and I think I would eat just about anything if this was on top of it.

Today began with a visit from the Easter Bunny. My basket was filled with chocolate covered peanut butter pretzels, chocolate covered blueberries, peeps, gummy penguins and some amazing jelly beans. I like that my Easter Bunny shops at Trader Joe’s. 

We went to 9 a.m. mass. I always underestimate how busy it is going to be on holidays, so showing up at our normal 5 to 10 minutes before mass meant we were sitting in the annex. Oh well, the service was nice. It also helped me to put my whining about the weather and missing people in perspective. 


After church we went running. I was supposed to have a 10 mile training run, but I cut it at 6 miles. I am feeling better, but I still having a hard time breathing. After about 4 miles my lungs were burning and not in an “I am pushing myself so they are burning” kind of way. I will do the 10 miler next weekend. I am still a far enough out from the race that I should be fine.

This afternoon we went to “Easter on Parade.” It is an event like nothing else I have ever experienced. Once again Monument Avenue, the road we ran on last week, was closed and people were parading up and down the street looking at the hats, enjoying the entertainment and just having a good time. This was a fun and interesting event and I think it would be really fun place to take kids.

Overall, it was a good Easter. It was so nice to spend it with my husband, and hopefully we will be able to spend it with more family in the next year or two.
